Pecan Roll Cookies

1 cup shortening (1/2 lb. sweet butter)
1 cup confectionery sugar
2 1/2 cups flour (sifted)
1 - 1 1/4 cups chopped walnuts or pecans
1 tablespoon water
1 teaspoon vanilla

This recipe can be made manually but is much easier in a mix-master.
Dough should be soft and a firm consistency. Shape each one like a date
and place on cookie sheet. Do not grease cookie sheet.
Bake in oven at 325 for 25 - 30 minutes

They should be a pale color, both top and bottom, when removed from oven.

Vegetarian Chopped Liver

1 can baby peas (regular size)
4 large onions (brown until carmelized) stirring occasionally
1 cup chopped walnuts
1/2 cup egg beaters or 2 fresh eggs. Scramble either one in micro
Dash hot pepper sauce
Handful of fresh parsley or 1 tablespoon dry parsley (optional)

Put all ingredients in blender and you may add some salt
The consistency may appear loose, but after refrigerated for a while it sets.

This does taste like chopped liver.

Ice Cream Cake

1 1/4 cups graham cracker crumbs
1/3 bar melted sweet butter
Mix together and bake in pie dish at 350 degrees F for 8 minutes

In double boiler, place large bar of chocolate with almonds, a handful of almonds, 1/3 cup water, 2 heaping tablespoons instant coffee and let melt in pot. Stir occasionally. Spoon on to crust that has been cooled a little, so that almonds are spread evenly.

Refrigerate for about one hour or until set. Then, put 1/2 gallon softened ice cream over the chocolate mixture. Flavors that would be complimentary to this cake include butter crunch, butter almond, chocolate chip, and coffee.

Foil and freeze. Before ready to use, top with cool whip and chocolate shavings.

This cake is so delicious and easy to make. Your guests will think you spent hours making it.

Decadent Apple Cake

MAKES ONE 8-INCH SQUARE CAKE

Anne writes: "This delicious cake is very easy to make."

INGREDIENTS

3 cups diced apples (equivalent to 3 or 4 apples with skin removed)
2 tablespoons butter
1/2 cup sugar
1 egg
1 teaspoon vanilla
1 cup flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 cup chopped walnuts

Cream sugar and butter, add egg, cinnamon, vanilla, nuts. Fold in apples and the rest of ingredients. Batter will be stiff. Grease and flour 8 x 8 inch pan. Bake at 350 degrees F for 40-45 minutes.

Delicious Diners Salad

Anne writes: "This salad is a wonderful side dish with a meal. There was a very famous diner in Newark, NJ., called the Weequahic diner. Later on they moved to Verona, NJ and was called the Claremont diner. I remember going there and always finding a bowl of this delicious salad on the table. It is really worth making, you'll get compliments galore."

INGREDIENTS

3 pounds cabbage, shredded. You can use white/green or red (The shredding can be done in a food processor or by hand.)
2 carrots, sliced into disks about 1/4-inch thick
2 green peppers, cut into bite-size pieces
2 cucumbers, peeled and sliced
2 large vidalia onions, sliced (If vidalia onions are not available, use regular ones.)
4 teaspoons sugar dissolved in 1/4 cup warm water (Can substitute 4 packages of sweet and low.
Incidentally, it's just as tasty with the sweet and low.)
3/4 cup of white vinegar
1/2 cup of canola oil
About 1-1/2 teaspoons salt, garlic powder, celery salt, and pepper to taste

Marinate the above ingredients in the refrigerator. This salad can last for many weeks in the refrigerator.
